The Palma chef Tito Verger, from the Rosa del Mar restaurant, has won the TaPalma de Oro 2021 award for the creation of his “Fried Donut in Korea.”

In this same modality, the winner of the silver was Matías Provvidenti, from the Maleva restaurant, who presented the “Ètnic, a tapa amb història” to the jury. And finally, the bronze went to Roberto Serra from Blat al Sac, who presented the “Indiorquí” cover.

Verger has been in the kitchen for more than 20 years. In 2020 he started working at Rosa del Mar, where he brings his avant-garde philosophy with a focus on detail.

The awards ceremony was held at the Palau de Congressos de Palma after the contest that took place on Monday from 4:00 p.m. and was attended by 400 people. A contest that has been divided into three modalities: Thematic Tapa, TaPalma Cocktail and TaPalma Tapa 2021.

In the Thematic Cover category, the Arrocería El Puente restaurant with chef Quique Erazo has won gold thanks to “Coca-Nnoli”. The silver in this modality went to Erika Marina Schaefer from Menjaibeu with “Marimonte” and, thirdly, the bronze went to Manuel Ortega from the restaurant Shaka for creating him “Ebi ‘Quely’ Uramaki”.

As for the cocktail contest, the winner of the Golden Cocktail has been Fernando Calderón from Katagi Blau for his cocktail “Tanjo El Nacimiento”. The silver has gone to José Luis Guerrero de Shaka thanks to “Oaxaca”. The bronze was won by Julià López, Emblemàtic barman, thanks to his creation “Figarel • lo”.

The event, organized by AgenciaCom and Restauración Caeb, and sponsored by the Palma City Council, the Fundació Mallorca Turisme and Baleària, aims to energize the city for a few days thanks to the restaurant sector, and to position Mallorca, and more specifically its capital , as the nerve center of Spanish gastronomy.
