“We chose Paseo Mallorca because it was away from the hustle and bustle, we were not expecting the boom there is now”. This is how Rafa Martín, owner of Brassclub, recalls the opening of his premises 8 years ago on the Palma’s Paseo Mallorca that today serves as the ‘golden mile’ of Mallorcan cocktails, together with Ginbo and Chapeau 1987. The evolution of cocktails has been exponential. “We were clear that we had to educate the palates, because in Spain we are more used to wine and beers”, explains Martín.

“Making the cocktails menu is a complex but fun job”, says the Brass expert, as he recounts how variety, the search for different cocktails and the harmony of flavors -sweet, citrus, smoked…- are taken into account. “We even think of those who do not drink alcohol; the ‘low alcohol’ are an upward trend”.

The spectacular staging is increasingly attracting the attention of consumers, who had also been able to savor them at home during the pandemic. Martín assures that “there is a cocktail for every moment and person. With a series of questions, as if we were bar psychologists, we capture what suits them best”.

Local and seasonal products are protagonists. In all of their creations they use a local product. He recommends the famous palo’s mojito: “People are surprised to drink ‘palo’ infused with basil, ginger and black beer foam. For me, one of the best and a small tribute to the island”.

Enjoying one of these cocktails in Mallorca is another way of getting closer to the tradition and the typical ingredients of the island. Also to travel through the senses to remote countries. But above all, its sips invite relaxation and enjoyment.
